33 year-old Sauvignon on limestone and clay silt soils. Grapes are hand harvested, destemmed, and fermented in 1200-liter wooden casks with indigenous yeasts. The wine is then transferred to 225-liter barrels for elevage for around 23 months, and is bottled without fining or filtration and zero addition of sulfur.

This Graf Sauvignon impresses in the glass with its relaxed face and handy substance, has aromas of caramel and gooseberry, nice salty minerality and some notes of lime and green mango. A touch of creaminess and a fantastic acidity!
