We use Shipton Mill Flours, organic flours milled all the way from the UK.

The mill is tucked away in Shipton Moyne Woods, Tetbury. At the heart of the mill, stone ground flour is the core, using traditional methods to mill traditional grains. The mill uses French burr millstones to stone grind their flours, a centuries old method, and a more gentle process on the grain, resulting in a coarser and creamy beige flour with amazing aroma.

Flour matters to us, and their stone-milled flours just hits with the extraordinary flavours of wheat, something we are really proud to use here at doudou for all our croissants, sourdough and various bakes.
